Mia's World Famous Lemon Meringue Pie

This pie is a staple of our nightly dessert rotation - also anything with meringue makes my heart happy :) perfect for a hot summer night, or really anytime because it’s that good.

So good, we even made a playlist about it… Enjoy ;)

Let's Get Started:

Crust: 

*Use your favorite graham cracker crust recipe. I would give you mine, but that’s top secret in my kitchen! You can also use a shortbread crust - I love alternating between the two depending on the mood.

Lemon filling:

⁃ 1 c. Sugar

⁃ 1/4 c. Cornstarch

⁃ 1/4 tsp. Salt

⁃ 1 1/2 c. Water

⁃ 4 egg yolks (save the whites!)

⁃ 2 x lemons + zest

⁃ 2 tbsp. Butter

 

Meringue:

(I don’t do this the traditional way, do what your heart desires)

⁃ 4 egg whites

⁃ 1 c. Sugar

⁃ 1/2 tbsp. Lemon Juice

 

Instructions:

Graham cracker crust:

⁃ make sure it’s pre-baked (slightly golden brown)

 

Lemon Filling:

⁃ Combine:

⁃ Sugar, cornstarch, salt, water, and lemon juice in a saucepan.

⁃ Turn on medium heat and let it come to a boil

⁃ Remove from heat quickly & stir in butter

⁃ in a separate bowl, beat egg yolks

⁃ Once eggs are beaten, take a couple spoonfuls of hot sugar mixture and temper egg yolks.

⁃ Once eggs yolks are tempered, combine yolks into hot saucepan.

⁃ Preheat to 325F

⁃ Turn heat back on and bring to a boil

⁃ Once thickened (should be pretty thick at this point), turn off heat and pour into pre-made crust of your choice.

⁃ Put into a pre-heated oven for about 10-15 minutes (eggs are already cooked from the stovetop, so no need for much longer)

⁃ Take out and put in fridge for a couple of hours until cool

 

 

Meringue:

⁃ Once ready to serve, combine egg whites, sugar, and lemon juice in a stand mixer.

⁃ Mix on high until stiff peaks form

⁃ Should be the consistency of a glossy whipped cream (make sure it stands on its own before placing on top of the pre-chilled pie.

⁃ After you have covered the lemon filling with meringue, take a baking torch and fire the top until golden brown :)

 

tips & tricks:

⁃ Room temp egg whites whip up way faster

⁃ Use fresh lemon juice - trust me, it makes all the difference
